Due to cost, most builders use plenum spaces for return air in a HVAC system. If your building only has supply vents(Hot/Cold Air), then it is a plenum space. If there are supply vents and return vents, then you have a non plenum space and riser cable can be used.
There are 2 main types of fiber, single mode and multimode. Single Mode is essentially future proof and typically used for long haul applications. Multimode has 5 iterations: OM1, OM2, OM3, OM4 and OM5. Older OM1 and OM2 applications are obsolete, OM3 is for up to 10gig, OM4 is for up to 40gig and OM5(New) is for up to 100gig.
